{"id":999,"date":"2010-02-11T22:12:58","date_gmt":"2010-02-12T04:12:58","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=999"},"modified":"2010-02-11T22:13:43","modified_gmt":"2010-02-12T04:13:43","slug":"artichokes","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=999","title":{"rendered":"Artichokes"},"content":{"rendered":"<p>Yum.\u00a0 We love artichokes around here and are always so excited when we start to see them in the springtime.\u00a0 It seems a little early this year, since it&#8217;s still unseasonably frigid right now, but we love &#8217;em, so we&#8217;re going for it.<\/p>\n<p>Stay tuned and I&#8217;ll show you how to disembowel these suckers and get &#8217;em fit for human consumption.\u00a0 You do have to wonder what the first guy to try to eat these was thinking.\u00a0 He must have been pretty freakin&#8217; hungry to even attempt it; these things are a lot of work for not a lot of sustenance, but, what tasty sustenance it is!<\/p>\n<p style=\"text-align: left;\"><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0551.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1000\" title=\"IMG_0551\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0551.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p>Lop off the bottom of the artichoke.\u00a0 Leave\u00a0 maybe an inch of the stem.\u00a0 Remove any small, shrimpy leaves from around the stem &#8211; there are usually 4 or 5 that are inedible and just in the way&#8230;<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0552.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1001\" title=\"IMG_0552\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0552.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p>Off with her head!\u00a0 Chop off the pointy top of your artichoke &#8211; maybe an inch or an inch and a half.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0553.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1002\" title=\"IMG_0553\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0553.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p>This is about what it should look like.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0554.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1004\" title=\"IMG_0554\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0554.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p>Trim off the pointy edges of each leaf with scissors or kitchen shears.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0555.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1005\" title=\"IMG_0555\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0555.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0556.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1006\" title=\"IMG_0556\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0556.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p>This is what your fully-prepped artichoke should look like.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0557.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1007\" title=\"IMG_0557\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0557.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p>Give the entire artichoke a quick rinse in some running water, if you&#8217;re finicky.\u00a0 Them rub down all of the cut surfaces (top, bottom and leaf tips) with half of a lemon, squeezing a bit of the juice onto the artichoke as you go.<\/p>\n<p>Repeat with as many artichokes as you are planning to cook.\u00a0 I can only fit 4 in my largest stockpot, so that&#8217;s what we usually do.\u00a0 For a family dinner, we usually will each have our own artichoke as a first course, but if I&#8217;m serving a crowd, I&#8217;ll make some for everyone to share.<\/p>\n<p>Place the artichokes in a very large stock pot and cover them with water.\u00a0 Sprinkle in a generous amount of kosher salt and squeeze the rest of the lemon juice into the water, too.\u00a0 Or just throw the lemon in the pot.\u00a0 Whichever.<\/p>\n<p>Cover the pot and cook over high heat until the artichokes are soft enough that you can pull a leaf off, but not so soft that they&#8217;re falling apart.\u00a0 This can take up to an hour, but I&#8217;d start to check them after about 40 minutes.\u00a0 This is the only tricky part, but even if they&#8217;re a bit overcooked, they&#8217;re still pretty fabulous.\u00a0 Undercooked, however, is NOT good, so err on the side of cooking them to long, if you&#8217;re in doubt.<\/p>\n<p>While they&#8217;re cooking, you can make the dipping sauces.\u00a0 The first sauce is VERY easy:\u00a0 Get a ramekin.\u00a0 Put about 6 Tbsp of butter in it.\u00a0 Melt it in the microwave.\u00a0 Sprinkle a little kosher salt in it if you used unsalted butter (which you should be doing, by the way, but that&#8217;s a whole other topic&#8230;)<\/p>\n<p>The second sauce isn&#8217;t much more difficult.\u00a0 Mix the following ingredients together in another small bowl or ramekin:<\/p>\n<p>1\/3 cup mayonnaise<\/p>\n<p>1 garlic clove, minced or pressed<\/p>\n<p>a sprinkle of kosher salt and freshly ground pepper<\/p>\n<p>a little squeeze of fresh lemon juice (about 1 teaspoon)<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0558.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1010\" title=\"IMG_0558\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0558.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p>When the artichokes are done, pull &#8217;em out of the water (be careful &#8211; use BBQ tongs) and serve &#8217;em along with the dips.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0568.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1011\" title=\"IMG_0568\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0568.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p>To eat &#8217;em, pull the leaves off, one at a time, drip them in the sauce of your choice (or naked&#8217;s good, too) and use your teeth to scrape the meat off of each leaf.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0569.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1012\" title=\"IMG_0569\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0569.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p>Once you get to the center of the artichoke, you&#8217;ll see a fuzzy thing that looks like the inside of a flower (well&#8230;it kind of *IS* the inside of a flower.)\u00a0 This is called the choke.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0571.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1013\" title=\"IMG_0571\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0571.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p>You don&#8217;t want to eat that, so gently pull out that fuzzy choke with your fingers (if it&#8217;s cooled down enough) or a gently scrape it out with a spoon and discard it.\u00a0 That bottom (under the choke) part?<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0572.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1014\" title=\"IMG_0572\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0572.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p>Well, that&#8217;s your reward for all your hard work, baby&#8230;that&#8217;s the artichoke heart.\u00a0 Dip it in some butter or aioli (that&#8217;s the fancy name for that mayo sauce we\u00a0 made earlier) and DIG IN.\u00a0 If you&#8217;re really disciplined (or full,) you can save it, after you eat all the leaves, and toss it into an omelet for your breakfast the next day.\u00a0 Yum.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0574.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1015\" title=\"IMG_0574\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0574.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yum.\u00a0 We love artichokes around here and are always so excited when we start to see them in the springtime.\u00a0 It seems a little early this year, since it&#8217;s still unseasonably frigid right now, but we love &#8217;em, so we&#8217;re going for it.
