{"id":929,"date":"2010-02-08T20:39:17","date_gmt":"2010-02-09T02:39:17","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=929"},"modified":"2010-02-09T07:55:35","modified_gmt":"2010-02-09T13:55:35","slug":"chickpea-pasta-with-almonds-and-parmesan","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=929","title":{"rendered":"Chickpea Pasta with Almonds and Parmesan"},"content":{"rendered":"<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0533.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-930\" title=\"IMG_0533\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0533.jpg\" alt=\"\" width=\"480\" height=\"480\" \/><\/a><\/p>\n<p>From January 2008 Real Simple magazine.\u00a0 Recipe <a href=\"http:\/\/www.realsimple.com\/food-recipes\/browse-all-recipes\/chickpea-pasta-almonds-parmesan-10000001695396\/index.html\">here<\/a>.<\/p>\n<p>This was quite good and was ridiculously fast and easy.<\/p>\n<p>A one-pan pasta meal?\u00a0 Unheard of!<\/p>\n<p>I used spaghetti instead of vermicelli, because I already had some.\u00a0 It took a little longer than 6 minutes to cook, but not much more.\u00a0 The reduced stock makes a tasty, glaze-y sort of sauce.<\/p>\n<p>The crushed red pepper adds a bit of a kick, so if your family\/kids are particularly heat sensitive, feel free to cut back a bit.\u00a0 Those that like more spice can always add more at the table, although the amount of heat wasn&#8217;t too much for my kids at their current ages, it might have been &#8220;too spicy, Mom!!!&#8221; when they were younger.<\/p>\n<p>We, of course, used vegetable stock to accommodate the Veggie Girl, but I will say that, although this pasta was very nice, it would have been MUCH better with chicken stock instead.\u00a0 If you&#8217;re a carnivore, a bit of cooked, crumbled bacon on top would have been pretty fabulous, too.\u00a0 We served it with salad topped with balsamic vinaigrette and garlic croutons.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0540.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-931\" title=\"IMG_0540\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/02\/IMG_0540.jpg\" alt=\"\" width=\"480\" height=\"478\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>From January 2008 Real Simple magazine.\u00a0 Recipe here.
