{"id":851,"date":"2010-01-28T22:29:17","date_gmt":"2010-01-29T04:29:17","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=851"},"modified":"2010-01-29T07:37:31","modified_gmt":"2010-01-29T13:37:31","slug":"roasted-vegetable-couscous-with-chickpeas-and-onion-pine-nut-topping","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=851","title":{"rendered":"Roasted Vegetable Couscous with Chickpeas and Onion-Pine Nut Topping"},"content":{"rendered":"<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/IMG_0328.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-852\" title=\"IMG_0328\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/IMG_0328.jpg\" alt=\"\" width=\"320\" height=\"320\" \/><\/a><\/p>\n<p>From January 2009 Cooking Light.\u00a0 Recipe <a href=\"http:\/\/find.myrecipes.com\/recipes\/recipefinder.dyn?action=displayRecipe&amp;recipe_id=1867570\">here<\/a>.<\/p>\n<p>Another Girl-friendly vegetarian meal.\u00a0 I clipped this one out of Cooking Light magazine about a year ago and the kids plucked it from my recipes files at last week&#8217;s &#8220;family meeting\/menu planning session.&#8221;\u00a0 I was worried that they were just tired and eager to get the meeting over with and weren&#8217;t being too careful about their choices.\u00a0 I was worried that I would spend an hour cooking it and they wouldn&#8217;t like it.\u00a0 Hubby doesn&#8217;t like raisins.\u00a0 Boy isn&#8217;t wild about large amounts of onins and Girl isn&#8217;t a fan of too-exotic spices.\u00a0 But&#8230;my fears were unfounded.\u00a0 They all liked this and it also proved to be much quicker and easier than the recipe, at first glance, would seem.\u00a0 After cooking this, I read some of the reviews of the recipe on Cooking Light&#8217;s website (Duh!\u00a0 I should be doing that FIRST, right?) and I agree with most of what&#8217;s written there, namely:<\/p>\n<p>Don&#8217;t skip the onion topping.\u00a0 In fact, consider making extra.\u00a0 It adds a TON of flavor.<\/p>\n<p>Add a bit more ras el hanout spice to the veggies before roasting. (FYI &#8211; if you have a hard time finding Ras el Hanout, try <a href=\"http:\/\/www.worldmarket.com\">CostPlus World Market<\/a>.\u00a0 It is possible to make your own, but most recipes call for some pretty exotic ingredients that you&#8217;re not likely to use for anything else&#8230;best, in my opinion, to buy it, if possible.)<\/p>\n<p>I highly recommend this recipe and I suspect that it&#8217;s one that will hold its own as leftovers (probably will even freeze well, although I&#8217;m going to test that theory, as I made a larger-than-called-for batch and we have quite a bit left over.)<\/p>\n<p>Hubby and I will be happily devouring some of the leftovers for lunch tomorrow.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>From January 2009 Cooking Light.\u00a0 Recipe here.
