{"id":645,"date":"2010-01-13T11:20:02","date_gmt":"2010-01-13T17:20:02","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=645"},"modified":"2010-01-13T19:44:57","modified_gmt":"2010-01-14T01:44:57","slug":"gougeres","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=645","title":{"rendered":"Gougeres"},"content":{"rendered":"<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/photo-1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-646\" title=\"photo-1\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/photo-1.jpg\" alt=\"\" width=\"240\" height=\"320\" \/><\/a><\/p>\n<p>Absolutely delightful little bites of cheesy heaven.\u00a0 Filled with butter and cheese, they are decadently\u00a0 sinful.\u00a0 These things are both ridiculous and sublime.\u00a0 Ridiculously sublime.\u00a0 Virtue and vice together.\u00a0 Seriously.\u00a0 Just make them.<\/p>\n<p>The recipe that I used is from the September 2009 issue of Wine Spectator magazine, but their website is subscription-only (how rude!,) so I can&#8217;t link to it directly.\u00a0 <a href=\"http:\/\/www.ecomii.com\/food\/recipes\/gougeres\">This recipe<\/a> is the closest that I&#8217;ve seen.\u00a0 If you cut the amount of gruyere by a couple of tablespoons and substitute a couple of pinches of cayenne for the black pepper, you&#8217;re pretty much there.\u00a0 When I made mine, I added a little freshly minced sage, which was good, but maybe just a TINY bit too much.\u00a0 I will cut back a little next time.\u00a0 Parsley or thyme would also be delicious, but tread lightly.\u00a0 It&#8217;s easy too overdo it.<\/p>\n<p>These are fabulous as an appetizer with a good glass of red wine, or, with dinner, in place of bread or rolls.\u00a0 The recipe is from Chef Terrance Brennan, of New York&#8217;s Artisanal, where Girl and I were lucky enough to have brunch with my mother last month.\u00a0 We had some of the gougeres there and they were fabulous, but this recipe is simple enough to recreate that they were just as good at home.\u00a0 The secret is really good quality cheese and eating them immediately fresh and warm out of the oven.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/IMG_8125.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-647\" title=\"IMG_8125\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/IMG_8125.jpg\" alt=\"\" width=\"233\" height=\"320\" \/><\/a><\/p>\n<p>Girl at Artisanal, with a GIGANTIC cup of hot chocolate.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Absolutely delightful little bites of cheesy heaven.\u00a0 Filled with butter and cheese, they are decadently\u00a0 sinful.\u00a0 These things are both ridiculous and sublime.\u00a0 Ridiculously sublime.\u00a0 Virtue and vice together.\u00a0 Seriously.\u00a0 Just make them.
