{"id":634,"date":"2010-01-13T10:31:19","date_gmt":"2010-01-13T16:31:19","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=634"},"modified":"2010-01-13T19:47:00","modified_gmt":"2010-01-14T01:47:00","slug":"spring-rolls","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=634","title":{"rendered":"Spring Rolls"},"content":{"rendered":"<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/IMG_7101.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-635\" title=\"IMG_7101\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/IMG_7101.jpg\" alt=\"\" width=\"317\" height=\"320\" \/><\/a><\/p>\n<p>Clockwise from top right:\u00a0\u00a0 julienned red and green bell pepper, thinly sliced teriyaki chicken and halved grilled shrimp, shredded lettuce, sliced baby corn and red onion, avocado and bean sprouts\u00a0 (which I grew myself!\u00a0 how&#8217;s that for advanced meal planning!), julienned carrot and cucumber.\u00a0 Rice noodles in round center section.<\/p>\n<p>This was an experiment, but has become a favorite family meal.\u00a0 Everyone loves to be able to customize and assemble their own meal and make it EXACTLY how they like it and it&#8217;s exceedingly healthy and low fat.\u00a0 This is a VERY popular meal with the kids.\u00a0 I usually am the person that&#8217;s on &#8220;wrapper duty&#8221; and make sure that there&#8217;s always a new wrapper soaking in the hot water, so that there&#8217;s one ready when someone needs it.\u00a0 We usually can eat at least three per person.<\/p>\n<p>Basically, it can be anything that you like:<\/p>\n<p>julienned or thinly sliced veggies:\u00a0 cucumber, bell pepper, carrot, lettuce, red onion, avocado<\/p>\n<p>bean sprouts, baby corn, baby spinach<\/p>\n<p>teriyaki-marinated grilled shrimp and\/or chicken<\/p>\n<p>thin rice noodles:\u00a0 I cut these into smallish pieces with kitchen shears and put them in a heatproof bowl.\u00a0 Pour boiling water over them (I use an electric kettle) and let them soak a few minutes until they&#8217;re softened.\u00a0 Drain before placing in your serving bowl.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/IMG_7104.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-636\" title=\"IMG_7104\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/IMG_7104.jpg\" alt=\"\" width=\"320\" height=\"200\" \/><\/a><\/p>\n<p>Assemble all of the ingredients and fillings on a platter, in whatever configuration you choose.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/IMG_7098.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-637\" title=\"IMG_7098\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/IMG_7098.jpg\" alt=\"\" width=\"320\" height=\"240\" \/><\/a><\/p>\n<p>Pour more boiling water (again, I use an electric kettle and keep refilling it, so that we can dump out the water and replace it as it cools during the meal) into a shallow and wide, heat-proof bowl (I use the salad bowl of my everyday stoneware.)\u00a0 Place one rice paper spring roll wrapper into the hot water at a time and let it soak to soften for a few seconds (10-15.)\u00a0 Remove quickly (using a fork or small tongs, if necessary, to avoid a burn) and place on your plate.\u00a0 Fill the wrapper with veggies or proteins of your choice and wrap up like a burrito.\u00a0 The rice paper will stick to itself and seal your spring roll.\u00a0 Two important tips:<\/p>\n<p>1.\u00a0 Place the fillings in a tight, compact line about 1 and 1\/2 inches wide, just off the center of the wrapper, stopping at least an inch away from each edge.<\/p>\n<p>2.\u00a0 Gently compress the fillings as you roll up the wrapper, to make the roll as tight as possible.\u00a0 This will help it stay intact as you eat it.\u00a0 No worries, though, if your roll does come apart&#8230;just grab a fork!<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/IMG_7174.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-638\" title=\"IMG_7174\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/01\/IMG_7174.jpg\" alt=\"\" width=\"320\" height=\"206\" \/><\/a><\/p>\n<p>Serve with your choice of sauces (duck sauce, soy sauce, my great homemade sauce recipe <a href=\"http:\/\/www.feedyourkids.com\/blog\/?p=99\">here<\/a>) for dipping and maybe edamame on the side.\u00a0 Oh, and some riesling!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Clockwise from top right:\u00a0\u00a0 julienned red and green bell pepper, thinly sliced teriyaki chicken and halved grilled shrimp, shredded lettuce, sliced baby corn and red onion, avocado and bean sprouts\u00a0 (which I grew myself!\u00a0 how&#8217;s that for advanced meal planning!), julienned carrot and cucumber.\u00a0 Rice noodles in round center section.
