{"id":469,"date":"2009-01-29T07:49:02","date_gmt":"2009-01-29T07:49:02","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=469"},"modified":"2009-01-29T07:49:02","modified_gmt":"2009-01-29T07:49:02","slug":"sweet-vermouth-chicken-spinach-rice-casserole-flaky-blood-orange-tart","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=469","title":{"rendered":"Sweet Vermouth Chicken, Spinach-Rice Casserole, Flaky Blood Orange Tart"},"content":{"rendered":"<p><span class=\"mt-enclosure mt-enclosure-image\" style=\"display: inline;\"><img loading=\"lazy\" decoding=\"async\" alt=\"IMG_6513.JPG\" src=\"http:\/\/www.feedyourkids.com\/IMG_6513.JPG\" width=\"320\" height=\"200\" class=\"mt-image-none\" style=\"\" \/><\/span><\/p>\n<p>OK, so this isn&#8217;t exactly a menu I would put together if I were planning it from scratch, but I still have a TON of that <a href=\"http:\/\/www.feedyourkids.com\/2009\/01\/pork-fried-rice.html\">leftover rice<\/a> around here, so as I was searching through my recipe files *(see photo below), looking for a recipe that called for pre-cooked rice, I came across this one (available online <a href=\"http:\/\/www.americanprofile.com\/recipes\/view\/38\/spinach-rice-casserole.html\">here<\/a>.)<\/p>\n<p><span class=\"mt-enclosure mt-enclosure-image\" style=\"display: inline;\"><img loading=\"lazy\" decoding=\"async\" alt=\"IMG_6511.JPG\" src=\"http:\/\/www.feedyourkids.com\/IMG_6511.JPG\" width=\"320\" height=\"299\" class=\"mt-image-none\" style=\"\" \/><\/span><\/p>\n<p>This stuff was a great big hit.  Almost all of us had seconds.  It was EASY.  Not gourmet or even particularly healthy, but easy.  It would be a little more complicated if you didn&#8217;t already have pre-cooked rice on hand, but not too bad.  I used onion powder, instead of onion flakes and also added a little <a href=\"http:\/\/www.emerils.com\/recipe\/4908\/Baby-Bam\">Baby Bam<\/a>.  If I make it again, I would probably use a little fresh, minced onion, sauteed in butter.<\/p>\n<p>I&#8217;ve been planning to make <a href=\"http:\/\/accidentalscientist.blogspot.com\/2006\/01\/sweet-vermouth-chicken.html\">this chicken<\/a> for a while and already had the ingredients on hand.  It&#8217;s adapted from <a href=\"http:\/\/find.myrecipes.com\/recipes\/recipefinder.dyn?action=displayRecipe&#038;recipe_id=1134027\">this<\/a> Cooking Light recipe.<\/p>\n<p><span class=\"mt-enclosure mt-enclosure-image\" style=\"display: inline;\"><img loading=\"lazy\" decoding=\"async\" alt=\"IMG_6507.JPG\" src=\"http:\/\/www.feedyourkids.com\/IMG_6507.JPG\" width=\"320\" height=\"234\" class=\"mt-image-none\" style=\"\" \/><\/span><\/p>\n<p><span class=\"mt-enclosure mt-enclosure-image\" style=\"display: inline;\"><img loading=\"lazy\" decoding=\"async\" alt=\"IMG_6509.JPG\" src=\"http:\/\/www.feedyourkids.com\/IMG_6509.JPG\" width=\"320\" height=\"228\" class=\"mt-image-none\" style=\"\" \/><\/span><\/p>\n<p><span class=\"mt-enclosure mt-enclosure-image\" style=\"display: inline;\"><img loading=\"lazy\" decoding=\"async\" alt=\"IMG_6512.JPG\" src=\"http:\/\/www.feedyourkids.com\/IMG_6512.JPG\" width=\"320\" height=\"206\" class=\"mt-image-none\" style=\"\" \/><\/span><\/p>\n<p>The tart recipe was a timely find from last January&#8217;s <a href=\"http:\/\/www.foodandwine.com\/\">Food &#038; Wine magazine<\/a>.  I try to cook seasonally, but am frequently so far behind on reading my cooking periodicals that I end up using recipes from the same month of the <em>previous<\/em> year.  Makes no sense, I know, but I recently did a HUGE clean-out of my recipe files and came across this one.  An opportunity to make <a href=\"http:\/\/www.feedyourkids.com\/2009\/01\/buttered-rye-toast-and-orange-1.html\">citrus supremes<\/a> into a dessert?  Perfect timing &#8211; see? &#8211; it&#8217;s January.  <em><strong>Again<\/strong><\/em>.<\/p>\n<p>Anyway&#8230;<\/p>\n<p>We are huge fans of the seasonal <a href=\"http:\/\/www.sunkist.com\/products\/oranges.aspx\">Cara Cara oranges<\/a> that are out right now.  I&#8217;ve been making them into <a href=\"http:\/\/www.feedyourkids.com\/2009\/01\/buttered-rye-toast-and-orange-1.html\">supremes<\/a> for the kids&#8217; lunches almost daily (her friends fight over any leftovers); I&#8217;ve used them in a <a href=\"http:\/\/www.feedyourkids.com\/2009\/01\/cara-cara-rice-pudding.html\">rice pudding<\/a>, I&#8217;ve baked them into <a href=\"http:\/\/www.feedyourkids.com\/2006\/12\/orange-slice-cookies.html\">cookies<\/a> and <a href=\"http:\/\/www.feedyourkids.com\/2008\/01\/cara-cara-orange-macaroons.html\">Parisian macaroons<\/a>, I&#8217;ve stirred them into <a href=\"http:\/\/www.feedyourkids.com\/2008\/09\/holding-down-the-fort.html\">cocktails<\/a>.  They are DELICIOUS.  The tart calls for a TON of blood oranges and, while Cara Caras aren&#8217;t an EXACT substitution for blood oranges, they are close enough.<\/p>\n<p>The tart has to freeze overnight, so we&#8217;ll have it tomorrow.
