A great way to take advantage of the last of the pomegranate crop and can be varied to include whatever strikes your fancy.<\/p>\n<p>Here&#8217;s how:<\/p>\n<p><strong>Salad with Pomegranate Vinaigrette and Fresh Pomegranate Arils<\/strong><br \/>\n(makes 4 small servings or 2 large-ish ones)<br \/>\n(adapted from <a href=\"http:\/\/www.ebfarm.com\/Recipes\/StyledRecipe.aspx?RecipeID=12\">this recipe<\/a> by Earthbound Farm)<\/p>\n<p>for the dressing:<br \/>\n1\/4 cup pomegranate juice<br \/>\n(squeezed from one fresh pomegranate, or you can use Pom or another bottled pomegranate juice)<br \/>\n1 Tbsp finely minced shallot<br \/>\n1 Tbsp white wine vinegar<br \/>\nsmall squeeze fresh lemon juice (1 teaspoon?)<br \/>\n1\/2 tsp sugar<br \/>\n3 Tbsp olive or canola oil or a combination of the two<\/p>\n<p>Whisk together all ingredients EXCEPT the oil.  Slowly pour the oil into the vinegar mixture, whisking until thoroughly incorporated.<\/p>\n<p>for the salad:<br \/>\n4 cups baby salad greens<br \/>\n1\/2 of a Granny Smith apple, thinly sliced (pear would be good, too)<br \/>\n1\/4 cup pecan halves, toasted at 350 degrees for about 3 minutes until fragrant and then cooled thoroughly<br \/>\n(Watch them very carefully so that they don&#8217;t burn!)<br \/>\narils (seeds) removed from one fresh pomegranate (you&#8217;ll have some left over)<br \/>\noptional:  a few Cara Cara orange supremes<\/p>\n<p>Assemble salad, sprinkling nuts and pomegranate seeds on top.
