I used to just cook a whole chicken breast for each of us (one for Boy and Girl to share) and then be frustrated when we had so much half-eaten chicken left over.  I think that when they are in smaller, flat pieces like this, they&#8217;re called a paillard, but I&#8217;m not positive about that.  Anyway, I love this technique and use it every time I&#8217;m frying chicken and even sometimes when I&#8217;m marinating it to throw on the grill.  Now I can actually feed my whole family (two adults, one 9-yr old and one 11-yr old) with one chicken breast &#8211; definitely a much more reasonable portion size!<\/p>\n<p><strong>Chicken Marsala <\/strong><\/p>\n<p>3 boneless (split) skinless chicken breasts<br \/>\n1 medium sized shallot<br \/>\n1\/2 pound white button mushrooms, sliced<br \/>\n1 cup marsala wine (NOT &#8220;cooking wine&#8221;, which is salty and chemical-y tasting)<br \/>\n2 cups good quality chicken stock<br \/>\ndry, unseasoned bread crumbs (about 2 &#8211; 3 cups)<br \/>\n2 eggs<br \/>\n2 Tbsp. milk<br \/>\n1 cup all-purpose flour<br \/>\nsalt, to taste<br \/>\npepper (optional) to taste<br \/>\n1 tsp. chopped fresh  (or 1\/2 tsp. dried) rosemary<br \/>\n1 stick butter (you won&#8217;t need it all)<br \/>\n1\/2 cup olive oil (you won&#8217;t need it all)<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20before%20cutting.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20before%20cutting.jpg\" width=\"548\" height=\"256\" \/><br \/>\nGet everything ready:  Put flour, egg\/milk (whisked together) and breadcrumbs each in a separate bowl.  Preheat oven (to 250 degrees) or warming drawer (medium-high).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20cut%20into%20pieces.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20cut%20into%20pieces.jpg\" width=\"482\" height=\"328\" \/><br \/>\nCut each piece of chicken (with the &#8220;grain&#8221;) into 3 or 4 &#8220;chicken fingers&#8221;.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20pounded.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20pounded.jpg\" width=\"551\" height=\"330\" \/><br \/>\nGently pound each &#8220;finger&#8221; with the flat side of a meat tenderizing mallet, until it is a uniform thickness.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20all%20pieces%20pounded.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20all%20pieces%20pounded.jpg\" width=\"451\" height=\"415\" \/><br \/>\nRepeat cutting and pounding for remaining chicken breasts.  Gently sprinkle each chicken &#8220;paillard&#8221; with salt and pepper, if desired.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20breaded.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20breaded.jpg\" width=\"561\" height=\"329\" \/><br \/>\nLightly coat each piece of chicken with flour, then dip in egg\/milk mixture to coat, then roll in breadcrumbs until completely covered.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20all%20breaded.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20all%20breaded.jpg\" width=\"473\" height=\"377\" \/><br \/>\nRepeat with remaining pieces of chicken.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20shallots%20chopped.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20shallots%20chopped.jpg\" width=\"528\" height=\"332\" \/><br \/>\nFinely chop the shallot.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20olive%20oil%20and%20butter%20in%20pan.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20olive%20oil%20and%20butter%20in%20pan.jpg\" width=\"476\" height=\"323\" \/><br \/>\nHeat 2 Tbsp. butter and 2 Tbsp. olive oil in large skillet over medium-high heat until bubbly.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20shallots%20sauteeing.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20shallots%20sauteeing.jpg\" width=\"514\" height=\"382\" \/><br \/>\nAll shallots and saute until softened.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20mushrooms%20in%20pan.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20mushrooms%20in%20pan.jpg\" width=\"422\" height=\"317\" \/><br \/>\nAdd mushrooms and cook until softened.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20setting%20mushrooms%20aside.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20setting%20mushrooms%20aside.jpg\" width=\"519\" height=\"331\" \/><br \/>\nPour cooked mushrooms and shallots out into a bowl and set aside, reserving as much of the oil\/butter in the pan as you can.  Add more butter and oil to the pan until you have enough to cover the bottom of the pan.  Heat over medium-high until melted and bubbly.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20frying.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20frying.jpg\" width=\"441\" height=\"330\" \/><br \/>\nAdd crumb-coated chicken to skillet and fry, being careful not to crowd the pieces.  Adjust heat and add more butter\/oil, as necessary.  Watch pieces carefully; turn them over and cook the other sides.  Remove chicken from pan as pieces are completely cooked and set aside on a large platter.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20frying%20other%20side.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20frying%20other%20side.jpg\" width=\"422\" height=\"317\" \/><br \/>\nRepeat with remaining pieces of chicken until all pieces are cooked through and crumb coating is browned on both sides.  Place platter of cooked chicken in heated oven or warming drawer.  Lower heat on pan.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20adding%20marsala.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20adding%20marsala.jpg\" width=\"473\" height=\"339\" \/><br \/>\nAdd marsala slowly and carefully to pan (it may sizzle, bubble and splatter!), stirring gently to scrape browned bits off bottom.  Slowly raise hit and simmer until wine has reduced and thickened.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20adding%20stock.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20adding%20stock.jpg\" width=\"413\" height=\"287\" \/><br \/>\nSlowly add chicken stock, continuing to simmer, stirring, until sauce is thickened.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"chicken%20-%20mushrooms%20%26%20shallots%20back%20in.jpg\" src=\"http:\/\/www.feedyourkids.com\/chicken%20-%20mushrooms%20%26%20shallots%20back%20in.jpg\" width=\"446\" height=\"353\" \/><br \/>\nWhen sauce has thickened to ALMOST serving consistency, add mushroom\/shallot mixture back to pan, sprinkle in rosemary and stir to combine.
