We had a super busy morning on his actual birthday, so I made it for him for today, instead. This is his all-time favorite breakfast and he would have it every day if they made childrens&#8217; chewable Lipitor.<\/p>\n<p>This is super-easy to make:<\/p>\n<p>Poach the eggs. I have a handy-dandy poaching pan from Wal-Mart that holds simmering water in the bottom and has little non-stick cups for 4 eggs, with a glass lid, so you can see when they&#8217;re getting done, but you can also do it in simmering water (add a little vinegar, I&#8217;m told, to help the whites hold together better).<\/p>\n<p>While the eggs cook, prepare the <a href=\"http:\/\/thepioneerwoman.com\/cooking\/2008\/09\/how-tomake-blender-hollandaise-sauce\/\">Hollandaise sauce<\/a>.<\/p>\n<p>Toast the English muffins (lightly &#8211; I used whole wheat ones, because I&#8217;m THE MEANEST MOM EVER).<\/p>\n<p>Slightly warm (microwave 15 seconds) the Canadian Bacon slices.<\/p>\n<p>Put it all together:<br \/>\nOne muffin half, topped with a ham slice, topped with an egg, topped with some sauce and then sprinkled with paprika.<\/p>\n<p>Hubby sliced the kiwi for me and then got all cute and called it &#8220;Kiwi Constantine.&#8221;<\/p>\n<p>Would you like some Juice Justinian with that?<\/p>\n<p>Update 1-31-12:<\/p>\n<p>I now poach my eggs directly in simmering water (add a little vinegar) and use <a href=\"http:\/\/www.foodandwine.com\/recipes\/asparagus-with-soft-cooked-eggs-and-brown-butter-hollandaise\">this hollandaise recipe<\/a> for Eggs Benedict, instead.\u00a0 MUCH better.\u00a0 Here&#8217;s an updated photo:<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2008\/09\/IMG_29531.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1716\" title=\"IMG_2953\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2008\/09\/IMG_29531.jpg\" alt=\"\" width=\"640\" height=\"458\" srcset=\"https:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2008\/09\/IMG_29531.jpg 640w, https:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2008\/09\/IMG_29531-300x214.jpg 300w\" sizes=\"auto, (max-width: 709px) 85vw, (max-width: 909px) 67vw, (max-width: 984px) 61vw, (max-width: 1362px) 45vw, 600px\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This was Boy&#8217;s special birthday request.
