{"id":296,"date":"2008-06-07T09:34:47","date_gmt":"2008-06-07T09:34:47","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=296"},"modified":"2008-06-07T09:34:47","modified_gmt":"2008-06-07T09:34:47","slug":"tuna-salad-and-english-muffin-tuna-melts","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=296","title":{"rendered":"Tuna Salad and English Muffin Tuna Melts"},"content":{"rendered":"<p>These are very popular with the whole family, including Girl, who does not normally eat any kind of seafood.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"IMG_4710.jpg\" src=\"http:\/\/www.feedyourkids.com\/IMG_4710.jpg\" width=\"320\" height=\"229\" \/><\/p>\n<p><strong>Tuna Salad Melts<\/strong><\/p>\n<p>2 cans water-packed tuna, drained ***<br \/>\ngood quality mayonnaise (Hellmann&#8217;s or homemade) to your taste\/consistency preference, about 1\/2 cup<br \/>\nchopped hard-boiled egg whites, 3 or 4<br \/>\nvery finely chopped red onion, about 1\/4 cup<br \/>\nfinely diced celery, about 1\/4 cup<br \/>\nvery finely chopped fresh Italian parsley, about 2 Tbsp.<br \/>\ngrated or shredded carrot, about 1\/4 cup<br \/>\nsalt and pepper to taste (or Baby Bam)<br \/>\na small pinch of dried thyme leaves<\/p>\n<p>optional: diced, peeled apple and\/or lightly toasted, slivered almonds.<\/p>\n<p>Gently blend together the tuna and the mayonnaise, breaking up tuna clumps with a large fork.  Stir in remaining ingredients to desired flavor.  Add more mayonnaise, if necessary, to reach your desired texture.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"IMG_4708.jpg\" src=\"http:\/\/www.feedyourkids.com\/IMG_4708.jpg\" width=\"320\" height=\"240\" \/><\/p>\n<p>To prepare the Tuna Melts:<\/p>\n<p>Preheat oven to 350 degrees.  Split English Muffins in half.  Scoop some tuna salad on top of each half.  Use a fork to flatten and spread it out, covering the muffin completely.  Top each one with a slice of your favorite cheese (we like Muenster).  Bake for a few minutes, until cheese is melted and muffin is warmed.<\/p>\n<p>***I prefer the lighter flavor of albacore tuna better, but it does have a higher mercury content than &#8220;regular&#8221; tuna, so decide for yourself.
