{"id":1773,"date":"2012-04-16T20:13:08","date_gmt":"2012-04-17T02:13:08","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=1773"},"modified":"2012-04-16T20:51:23","modified_gmt":"2012-04-17T02:51:23","slug":"black-bean-salsa-from-our-friend-af","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=1773","title":{"rendered":"Black Bean Salsa from our friend A.F."},"content":{"rendered":"<p><strong>Black Bean Salsa<\/strong><\/p>\n<p>\/><\/a><\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2012\/04\/20120416-214906.jpg\"><img decoding=\"async\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2012\/04\/20120416-214906.jpg\" alt=\"20120416-214906.jpg\" class=\"alignnone size-full\" \/><\/a><\/p>\n<p>1 16 ounce bag frozen sweet corn, thawed to room temperature and drained<\/p>\n<p>2 Tbsp unsalted butter <\/p>\n<p>3 cans black beans, rinsed and drained (or 2 cups dried black beans, soaked overnight, cooked until tender and drained)<\/p>\n<p>1 large (or 2 small) white onion, finely chopped <\/p>\n<p>one 10-ounce package cherry or grape tomatoes, coarsely chopped<\/p>\n<p>leaves from 1 large bunch cilantro, chopped<\/p>\n<p>3 large jalape\u00f1o peppers, minced (Remove seeds from 1 or 2 of the peppers before chopping to control the spiciness; the &#8220;heat&#8221; is in the ribs and seeds.)<\/p>\n<p>1\/2 cup apple cider vinegar<\/p>\n<p>1\/2 cup fresh lime juice<\/p>\n<p>salt to taste (start with about 3\/4 tsp)<\/p>\n<p>Heat the butter over high heat in a large saut\u00e9 pan until foamy.  Add the corn and cook, stirring occasionally, until corn is browned and very fragrant.<\/p>\n<p>Place corn in a very large mixing bowl and add all remaining ingredients.  Toss gently to combine.  Adjust seasonings to taste.  Feel free to add a little cumin or a minced garlic clove or a little <a href=\"http:\/\/www.foodnetwork.com\/recipes\/ingrid-hoffmann\/adobo-grilled-chicken-salad-in-a-tortilla-bowl-recipe\/index.html\">Adobo seasoning<\/a> or chili powder, if that suits your taste.
