{"id":1527,"date":"2010-12-03T12:13:55","date_gmt":"2010-12-03T18:13:55","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=1527"},"modified":"2010-12-03T14:57:00","modified_gmt":"2010-12-03T20:57:00","slug":"flexitarian-tacos-with-spinach-corn-black-beans-and-goat-cheese-with-optional-adobo-chicken","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=1527","title":{"rendered":"Flexitarian Tacos with Spinach, Corn, Black Beans and Goat Cheese (with optional Adobo Chicken)"},"content":{"rendered":"<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/12\/IMG_2585.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1543\" title=\"IMG_2585\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/12\/IMG_2585.jpg\" alt=\"\" width=\"640\" height=\"444\" \/><\/a><\/p>\n<p>These were delicious and VERY quick and easy.\u00a0 They were inspired by <a href=\"http:\/\/www.realsimple.com\/food-recipes\/browse-all-recipes\/vegetarian-tacos-spinach-corn-goat-cheese-00000000029612\/index.html\">this recipe<\/a>.\u00a0 If you don&#8217;t already have some adobo seasoning on hand, I highly recommend mixing up a batch.\u00a0 It&#8217;s great to season lots of things, but is perfect for spicing up chicken to add to tacos, tostadas, enchiladas, salads, etc.\u00a0 The flavor is wonderful.<\/p>\n<p><strong>Flexitarian Tacos<\/strong><\/p>\n<p>1 Tbsp canola oil<\/p>\n<p>2 cups frozen corn, thawed and drained of any residual moisture<\/p>\n<p>1 5-ounce package baby spinach<\/p>\n<p>1 can (or about 1 and one-half cups) cooked black beans, rinsed and drained<\/p>\n<p>8 small flour tortillas<\/p>\n<p>3\/4 cup crumbled fresh goat cheese (3 ounces)<\/p>\n<p>3\/4 cup store-bought refrigerated salsa<\/p>\n<p>(the ONLY acceptable store-bought salsa, if you live in Central Texas, is Rose&#8217;s Just Right Fresh salsa&#8230;there are no words)<\/p>\n<p>a few teaspoons <a href=\"http:\/\/www.foodnetwork.com\/recipes\/ingrid-hoffmann\/adobo-grilled-chicken-salad-in-a-tortilla-bowl-recipe\/index.html\">adobo seasoning<\/a> (scroll down for recipe), to taste<\/p>\n<p>2 boneless, skinless chicken thighs<\/p>\n<p>Sprinkle chicken thighs liberally with adobo seasoning on both sides and then grill them, either outside on a grill pan.\u00a0 Set aside.<\/p>\n<p>Heat the oil in a large, wide saute pan over VERY high heat.\u00a0 Add the corn and cook, stirring occasionally, until corn has started to brown slightly around the edges.\u00a0 Lower the heat in the pan to medium and add the spinach.\u00a0 Stir occasionally until the spinach has wilted.\u00a0 Add the beans to the pan and continue cooking until warmed through.\u00a0 Remove from heat.<\/p>\n<p>Cut chicken into thin strips.<\/p>\n<p>Fill tortillas with some of the veggie mixture and then top with cheese and salsa, as desired.\u00a0 The carnivores can add a bit of chicken to their tacos, as well.<\/p>\n<p>I&#8217;ve marked this recipe as gluten-free, because you could easily substitute corn tortillas for the wheat.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>These were delicious and VERY quick and easy.\u00a0 They were inspired by this recipe.\u00a0 If you don&#8217;t already have some adobo seasoning on hand, I highly recommend mixing up a batch.\u00a0 It&#8217;s great to season lots of things, but is perfect for spicing up chicken to add to tacos, tostadas, enchiladas, salads, etc.\u00a0 The flavor &hellip;
