{"id":1499,"date":"2010-09-23T08:38:15","date_gmt":"2010-09-23T14:38:15","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=1499"},"modified":"2010-09-23T08:38:15","modified_gmt":"2010-09-23T14:38:15","slug":"pork-loin-chops-with-cinnamon-apples-classic-potato-pancakes-spicy-green-beans-with-garlic-oil-and-preserved-lemon","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=1499","title":{"rendered":"Pork Loin Chops with Cinnamon Apples, Classic Potato Pancakes, Spicy Green Beans with Garlic Oil and Preserved Lemon"},"content":{"rendered":"<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2276.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1500\" title=\"IMG_2276\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2276.jpg\" alt=\"\" width=\"480\" height=\"320\" \/><\/a><\/p>\n<p>Pork Chops and Apples recipe <a href=\"http:\/\/find.myrecipes.com\/recipes\/recipefinder.dyn?action=displayRecipe&amp;recipe_id=549832\">here<\/a>.<\/p>\n<p>Potato Pancakes recipe <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Classic-Potato-Pancakes-233361\">here<\/a> (we served them with sour cream and they were fantastic!)<\/p>\n<p>For the green beans, I was inspired by <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Sauteed-Green-Beans-109121\">this recipe<\/a> (which I&#8217;ve made <a href=\"http:\/\/www.feedyourkids.com\/blog\/?p=1313\">before<\/a>) and another one with preserved lemon in Madhur Jaffrey&#8217;s awesome <a href=\"http:\/\/www.amazon.com\/Madhur-Jaffreys-World-Vegetarian-Meatless\/dp\/0517596326\">World Vegetarian cookbook<\/a> and combined them and adapted them to make my own, which was quite delicious.\u00a0 Ideally, the beans would be a little more browned that the ones in my photo, but these were still good.<\/p>\n<p><strong>Spicy Green Beans with with Garlic Oil and Preserved Lemon<\/strong><\/p>\n<p>1 pound fresh green beans, washed and cut into 1 1\/2 to 2 inch long pieces<\/p>\n<p>2 or 3 garlic cloves, thinly sliced (think <a href=\"http:\/\/www.youtube.com\/watch?v=MQhBfRDd6GM\">Paul Sorvino in Goodfellas<\/a>)<\/p>\n<p>2 Tbsp olive oil<\/p>\n<p>1 wedge of <a href=\"http:\/\/www.foodandwine.com\/recipes\/lemon-confit\">preserved lemon<\/a> (Use the rind only; remove and discard the pulp), rinsed well and finely chopped<\/p>\n<p>(If you don&#8217;t want to make your own, you can buy preserved\/Moroccan lemons at a gourmet store.\u00a0 They are VERY simple and inexpensive to make, but they do have to sit for a while.)<\/p>\n<p>a sprinkle of red pepper flakes, to taste (start with 1\/4 tsp.)<\/p>\n<p>kosher salt and freshly ground black pepper<\/p>\n<p>Blanch green beans by covering them with cold water in a medium saucepan.\u00a0 When they come to a boil, drain them and soak them in ice water until they are cool.\u00a0 Drain them again and set them aside.<\/p>\n<p>Heat the oil in a large saute pan over medium-high heat until hot but not smoking.\u00a0 Add the garlic and cook, stirring constantly, until the garlic is lightly golden-toasted, but not brown.\u00a0 Quickly remove and discard the garlic.<\/p>\n<p>Add the green beans to the pan and cook, stirring only once or twice, until the beans are slightly softened and lightly browned in spots, but not mushy.\u00a0 You&#8217;ll need to watch them carefully, since they won&#8217;t brown if you stir them too much, but if you don&#8217;t toss\/stir them enough, they&#8217;ll scorch or stick to the bottom of the pan.<\/p>\n<p>When the beans have reached your desired doneness, sprinkle them with salt and pepper, add the chili flakes and lemon and stir to coat evenly.\u00a0 Remove from heat and serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pork Chops and Apples recipe here.
