{"id":1495,"date":"2010-09-23T08:12:26","date_gmt":"2010-09-23T14:12:26","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=1495"},"modified":"2010-09-23T08:12:26","modified_gmt":"2010-09-23T14:12:26","slug":"adobo-grilled-chicken-black-bean-quinoa-salad-and-a-crunchy-roasted-corn-repeat","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=1495","title":{"rendered":"Adobo Grilled Chicken, Black Bean &#038; Quinoa Salad and a Crunchy Roasted Corn repeat"},"content":{"rendered":"<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2260.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1496\" title=\"IMG_2260\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2260.jpg\" alt=\"\" width=\"480\" height=\"316\" \/><\/a><\/p>\n<p>YUM!\u00a0 This was SUCH a delicious meal.\u00a0 I had planned on only making the black bean &amp; quinoa salad and grilled chicken, but The Boy was with me at the supermarket and saw corn on the cob and requested this corn, which he loves.\u00a0 It sort &#8220;went with&#8221; the meal, so I acquiesced.<\/p>\n<p>Black bean and quinoa salad recipe <a href=\"http:\/\/www.foodandwine.com\/recipes\/black-bean-and-quinoa-salad\">here<\/a>.\u00a0 This recipe is delicious, but makes a ton, but it also keeps in the fridge fairly well for a day or two and makes a great lunch the next day.\u00a0 If you&#8217;re not a fan of leftovers and you&#8217;re not feeding a crowd, I&#8217;d recommend making a half-batch.\u00a0 It was quite good and pretty simple.<\/p>\n<p>The corn recipe, basically, is <a href=\"http:\/\/www.feedyourkids.com\/blog\/?p=368\">here<\/a>, but I used <a href=\"http:\/\/www.penzeys.com\/cgi-bin\/penzeys\/p-penzeysarizonadreaming.html\">Penzey&#8217;s Arizona Dreaming<\/a> for the seasoning this time.\u00a0 A universal hit, every time.\u00a0 Have served it for company and always have people ask for the recipe.\u00a0 Boy, in particular, LOVES this stuff.<\/p>\n<p>The chicken is just boneless, skinless thighs sprinkled liberally with this fantastic <a href=\"http:\/\/www.foodnetwork.com\/recipes\/ingrid-hoffmann\/adobo-grilled-chicken-salad-in-a-tortilla-bowl-recipe\/index.html\">Adobo seasoning mixture<\/a> (scroll down) and then grilled.\u00a0 I really love this spice blend and am planning to use it more in the  future.\u00a0 It&#8217;s great on chicken that you&#8217;re planning to put in any kind  of Mexican dish (enchiladas, tostadas, fajitas, etc.)\u00a0 Achiote\/annatto can be a little bit hard to find, but try a Latin market (or the Latin aisle of a large supermarket.)\u00a0 If you&#8217;re in Austin, Central Market has whole annatto seeds (in their bulk section) that can be ground in your spice-dedicated grinder.<\/p>\n<p>What?\u00a0 You don&#8217;t have one of those?!!?!\u00a0 $20 can fix that.\u00a0 You NEED one.\u00a0 How else can you make <a href=\"http:\/\/www.feedyourkids.com\/blog\/?p=216\">garam masala<\/a>?<\/p>\n<p>*This meal is gluten-free, if you use gluten-free breadcrumbs.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>YUM!\u00a0 This was SUCH a delicious meal.\u00a0 I had planned on only making the black bean &amp; quinoa salad and grilled chicken, but The Boy was with me at the supermarket and saw corn on the cob and requested this corn, which he loves.\u00a0 It sort &#8220;went with&#8221; the meal, so I acquiesced.
