{"id":1439,"date":"2010-09-05T14:09:06","date_gmt":"2010-09-05T20:09:06","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=1439"},"modified":"2010-09-05T14:32:46","modified_gmt":"2010-09-05T20:32:46","slug":"more-spring-rolls-with-some-new-dipping-sauces","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=1439","title":{"rendered":"More Spring Rolls, with some new dipping sauces"},"content":{"rendered":"<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2084.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1442\" title=\"IMG_2084\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2084.jpg\" alt=\"\" width=\"343\" height=\"480\" \/><\/a><\/p>\n<p>Spring Rolls are becoming one of our all-time favorite meals lately.\u00a0 They&#8217;re very vegetarian-friendly (although it&#8217;s easy to add meat, for any carnivores that would like it,) there&#8217;s not much &#8220;cooking&#8221; involved (although there is lots of chopping!) and they&#8217;re light and healthy.<\/p>\n<p>I made a &#8220;fancy&#8221; version last night, with a few extra ingredients and dipping sauces.<\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2080.jpg\"><\/a><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2083.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1441\" title=\"IMG_2083\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2083.jpg\" alt=\"\" width=\"480\" height=\"343\" \/><\/a><\/p>\n<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2080.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1440\" title=\"IMG_2080\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2080.jpg\" alt=\"\" width=\"480\" height=\"343\" \/><\/a><\/p>\n<p>The ingredients that I used (in large tray) are:<\/p>\n<p>rice noodles, sauteed sliced mushrooms, shredded romaine lettuce, thinly sliced red onion, sliced avocado, mung bean sprouts (that I grew myself!,) julienned red bell pepper, cucumber and carrot, grilled Teriyaki chicken, shrimp, baby corn and chopped water chestnuts.<\/p>\n<p>I also had some fresh chopped chives and peanuts and cilantro and mint leaves to add as garnish inside the rolls.<\/p>\n<p>The new dipping sauces that I tried were <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Shrimp-Spring-Rolls-with-Hoisin-Dipping-Sauce-239089\">Hoisin dipping sauce<\/a> and a <a href=\"http:\/\/www.foodnetwork.com\/recipes\/saras-secrets\/shrimp-spring-rolls-with-peanut-dipping-sauce-recipe\/index.html\">peanut dipping sauce<\/a>.\u00a0 The third one is the <a href=\"http:\/\/www.feedyourkids.com\/blog\/?p=99\">spicy\/sweet sauce<\/a> that we&#8217;ve used before.\u00a0 The spicy-sweet sauce is still Hubby&#8217;s favorite, but the kids and I LOVED the peanut sauce, so I will definitely be making that one again in the future.\u00a0 Deee-lish.<\/p>\n<p>For quantity\/planning purposes, in case you decide to make this, I used two boneless, skinless chicken breasts (marinated in Teriyaki sauce, then grilled and sliced) and about a cup of thawed, frozen, pre-cooked shrimp.\u00a0 I made a half-batch of the peanut sauce (single batches of the other two.)\u00a0 I used one can each of the water chestnuts and baby corn, one avocado, about a cup of sprouts, about 1\/4 of a red onion, about 1\/4 lb of mushrooms (sliced and sauteed in butter\/olive oil until softened and golden) and one romaine lettuce heart.\u00a0 I used half of an 8 ounce package of <a href=\"http:\/\/www.amazon.com\/Ka-Me-Rice-Sticks-8-Ounce-Units\/dp\/B000ETG55Q\">rice sticks\/rice vermicelli noodles<\/a> and less than one package of <a href=\"http:\/\/www.gourmetsleuth.com\/Dictionary\/S\/Spring-Roll-Wrapper-5663.aspx\">spring roll wrappers<\/a>.<\/p>\n<p>I was serving 6 people, one of whom is a vegetarian and two others of whom do not eat shrimp, but everyone at their fill and there were enough ingredients leftover to make 6 more vegetarian spring rolls (the meat was all gone) the next day.\u00a0 I also served some steamed, in-the-shell edamame along with this.\u00a0 If you&#8217;re serving REALLY hungry people, you might not have many\/any leftovers.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Spring Rolls are becoming one of our all-time favorite meals lately.\u00a0 They&#8217;re very vegetarian-friendly (although it&#8217;s easy to add meat, for any carnivores that would like it,) there&#8217;s not much &#8220;cooking&#8221; involved (although there is lots of chopping!) and they&#8217;re light and healthy.
