{"id":1399,"date":"2010-09-01T08:33:55","date_gmt":"2010-09-01T14:33:55","guid":{"rendered":"http:\/\/www.feedyourkids.com\/blog\/?p=1399"},"modified":"2010-09-01T08:33:55","modified_gmt":"2010-09-01T14:33:55","slug":"greek-salad","status":"publish","type":"post","link":"https:\/\/www.feedyourkids.com\/blog\/?p=1399","title":{"rendered":"Greek Salad"},"content":{"rendered":"<p><a href=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2057.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1417\" title=\"IMG_2057\" src=\"http:\/\/www.feedyourkids.com\/blog\/wp-content\/uploads\/2010\/09\/IMG_2057.jpg\" alt=\"\" width=\"480\" height=\"354\" \/><\/a><\/p>\n<p>Adapted from a recipe from our friend, A.F., who adapted it from a recipe in the Pittsburgh Steelers cookbook.\u00a0 It is flavorful and delicious and can be a salad course, but is also hearty enough (add a loaf of crusty bread) to be a meal on its own.<\/p>\n<p><strong>Greek Salad<\/strong><\/p>\n<p>1 head leaf lettuce (or 5 ounces packaged baby greens)<\/p>\n<p>1 6-ounce package crumbled feta cheese (or a 6-ounce block, cut into small cubes)<\/p>\n<p>1 12-ounce jar Kalamata olives, drained<\/p>\n<p>1 1\/2 cups grape tomatoes (cut in half, if desired)<\/p>\n<p>1 seedless cucumber<\/p>\n<p>(peeled, cut in half lengthwise, seeded and sliced into half-inch wide half-moons)<\/p>\n<p>Dressing:<\/p>\n<p>1\/4 tsp. black pepper<\/p>\n<p>1\/4 tsp. garlic salt<\/p>\n<p>1 heaping Tbsp dried mint<\/p>\n<p>1 heaping Tbsp dried oregano<\/p>\n<p>6 Tbsp extra-virgin olive oil<\/p>\n<p>3 Tbsp freshly squeezed lemon juice<\/p>\n<p>Lay lettuce or greens in the bottom of a very large salad bowl.<\/p>\n<p>In a small bowl, whisk together the herbs and spices, and lemon juice.\u00a0 Pour the olive oil in, in a slow stream, whisking constantly and quickly until fully incorporated and slightly thickened.<\/p>\n<p>Pour desired amount of dressing over salad (you may not need it all) and toss gently to coat.\u00a0 Top with tomatoes, cucumbers, olives and feta.<\/p>\n<p>Serve immediately.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Adapted from a recipe from our friend, A.F., who adapted it from a recipe in the Pittsburgh Steelers cookbook.\u00a0 It is flavorful and delicious and can be a salad course, but is also hearty enough (add a loaf of crusty bread) to be a meal on its own.
